Anaerobic fermentation. After the harvest we separate the cherry beans in your fermentation state and put them in barrel with yeast: oro per 60 hours, without the air. We feel the temperature 3 times per day because the temperature can't pass de 40 degrees Celsius.
After the harvest the coffee we put in all the African Bed for 5 days, after 5 days we started the folding process, we fold it in half and let it rest for more 5 days; after that we folding again to 1/4 and rest also per 5 days; finally we folding 1/3 and rest until the coffee goes to 15% umidity. After drying the coffee is placed in big bags to achieve 11,5% the umidity.
