As the eldest of three children, he grew up amidst his family’s coffee fields, immersing himself in agricultural work from an early age and cultivating a profound love for the land and the art of coffee production. His extensive travels throughout Colombia enriched his knowledge and perspective, and his integrity and deep-rooted values distinguish him in a world that values authenticity. At just 30 years old, Jhonatan is now adding a new dimension to his family’s legacy by focusing on specialty coffees. The process begins with a careful selection of the ripe cherries, which are then floated to eliminate
impurities and dirt from the harvest, and immediately after the anaerobic fermentation is carried
out in tanks. Once fermentation has stopped, the coffee is dried in the sun until it reaches a
humidity of 11%.
