Anaerobic fermentation takes place for 120 hours in airtight plastic containers to ensure a homogeneous fermentation process. The coffee is then sun-dried on parabolic beds or patios for approximately three weeks. There is no fermentation step, but a natural fermentation does occur while the cherries are being dried.

The farm is part of the Pérez family’s business called Alma del Huila, led by Mr. Gilberto Pérez. It has 20 hectares, of which 14 hectares are coffee crops and the other 6 hectares are part of a forest where many water sources are born, providing water for
the people of El Agrado. They have approximately 100,000 coffee trees. On this farm, coffee is cultivated and harvested by hand, but the cherries are taken to a wet processing center located in Garzón (another municipality in the Huila department), which is half an hour away from El Agrado. Danilo Pérez, son of Gilberto, is a young producer working in various parts of Huila, Colombia. Born into a family involved in coffee production, Danilo has been engaged in
the coffee industry from a young age. He owns and oversees the management of multiple farms and works closely with the on-ground team to ensure proper picking and sorting are carried out. La cabaña is a single estate located in El Agrado municipality in Huila department at south-western part of Colombia between Central and East Andes mountain ranges.
