Fermentation: The process of harvesting and processing coffee begins with the collection of ripe beans. Once selected, these beans are packed in Grainpro bags for temporary storage to control oxidation. This initial packaging lasts between 36 and 48 hours. Subsequently, the packed beans undergo the pulping process, which extends over a period of 36 to 42 hours. This method ensures that the coffee beans maintain their quality and distinctive flavor throughout the entire process. Finally, they undergo a short washing process.

The first owner of La Siberia farm was Orlando Arboleda, who already had a small plantation of Caturra coffee with approximately 1200 coffee trees and some pasture areas. In 1997, Einar Ortiz purchased the farm along with his wife Amaly Díaz. At that time, they moved to the farm with their son Neiver, and shortly thereafter, their second son Neyer was born.

The Ortiz Díaz family faced many challenges initially. Upon arriving at La Siberia, they found limited infrastructure and an insufficient number of coffee trees to support significant production. With determination and hard work, Einar and Amaly set out to improve the conditions of the farm. They began by enriching the soil, applying sustainable and organic agriculture techniques to increase fertility.

During their childhood, Neiver and Neyer helped their parents with farm work. Neiver, being the eldest, showed a particular interest in cultivation techniques. Today, Neiver has his own farm but frequently visits La Siberia to work on a coffee lot he maintains there, applying innovative practices he has learned. The younger son, Neyer, still lives on the farm with his parents and actively contributes to daily tasks, bringing new ideas and methods to improve production. The Ortiz Díaz family has worked tirelessly to diversify the coffee varieties planted on La Siberia farm. Initially, the farm only had Yellow Caturra coffee, but over time, they have introduced varieties such as Chiroso Caturra and Gesha, known for their high quality and distinctive flavor. These varieties have not only improved production but have also attracted buyers interested in specialty coffees.

In addition to coffee, La Siberia farm has expanded its crops to include beans and plantains. These additional crops not only provide an extra source of income but also help maintain the farm’s sustainability. Crop rotation and agricultural diversity have enabled the Ortiz Díaz family to maintain a healthy and productive ecosystem.

Over the years, La Siberia farm has become an example of successful and sustainable family agriculture. The dedication of the Ortiz Díaz family and their commitment to quality and innovation have transformed the farm into a model in the region.
