Contributing Producers
The women producers who are part of the Guaneñas have been working with coffee for generations, focusing on high-quality beans. Since 2014, they have partnered with Caravela, receiving technical support to improve both farm practices and infrastructure, including pulping, fermentation, and coffee drying. Due to the region’s unique climate conditions, the drying phase is slower compared to other areas, allowing the coffee beans to fully develop their flavor.
The drastic climate shifts also stress the coffee cherries, forcing the trees to adapt, which contributes to the coffee’s distinctive profile and quality. At night, the fog slows the plants’ metabolism, resulting in better nutrient processing. This stress benefits the coffee quality, as the plant sends more nutrients to the cherries, increasing the sugar content in the mucilage. This combination of factors gives the coffee from this region its unique profile and exceptional quality.
