Corazón de Jesús Micro-Mill belongs to the Alvarado Fonseca family, and it was founded in 2015 focusing on the production of specialty coffees in the micro-region of Chirripo. It is truly inspiring to see the improvements that the Alvarado Fonseca family have done to their processing facility during these 7 harvests that they have been operating, all the way to becoming a COE 2022 third place winner. After harvesting only, the ripe cherries, this coffee entered the floater separati- on system at the mill to sort out the floaters, but also to rinse out the cherries. Afterward, the cherries were placed in polypropylene bags under the shade for two days. On the third day, it was placed in cement patios for 10 days, where it was pilled up and covered at night. During the day It was only moved around 3 times. on day 13 It was placed In African beds for 15 more days until it had 10.5% humidity.
