Background information

The Sambewe AMCOS was created by the Lungwa FG, Nansama FG, Sambewe FG and Mandelewo FG in 2018. Natural Processing Techniques The process starts with the hand sorting of overripe and underripe.
The red ripe cherry is put I barrel half full of clean water and the floaters are removed. The dense beans are washed and transported to the drying table. The turning of the beans is done twice per hour for the first 10 days. The cherry is covered in plastic bags at night to regaining moisture. The process is monitored for 20days while checking the moisture levels. Drying to reach the moisture level of 10% takes between 24-30 days depending on the weather. After that the dried cherry is ready for pulping.

Additional information

The Sambewe AMCOS has different plans for the future:
1) Build a new processing plant
2) Renovate the office and warehouse building
3) Plant more local shade trees to conserve the land

There is a legend in the village, that says that a snake called “Python” is living in the river and guarding it.
