Luz Helena, the mother of Felipe and Carlos Arcila (the brothers who run Cofinet to export the family’s coffees) has always been an incredible advocate for coffee from an early age. She grew up in Armenia, Quindio, which is part of the coffee triangle in Colombia. (The coffee triangle use to be the highest producing coffee of Colombia 20 years ago). This lot comes from Finca Maracay, an 8 hectares farm in Armenia.
Luz Helena has not only managed her own coffee farm, but she has also managed other farms that produce other commodities such as avocado and oranges.
Process
This coffee was exposed to a dry anaerobic fermentation period of 72 hours with the pulp on. During this fermentation stage, cinnamon sticks were added. The cherries were then pulped and placed to dry on raised beds until ideal moisture content
was achieved.
Variety
This micro-lot is 100% Pink Bourbon. This varietal is currently under research in order to determine its origin. It is said that it is a mutation that took place at 2100 m.a.s.l in San Adolfo, Huila.
