Colombia Marcela Castellanos

Marcela was born in Bogota, Colombia. She studied medicine and holds a post graduate degree in occupational medicine.  She and her husband was growing and fermenting coffee since 2011. She was passionate about the coffee world, its fragrances, flavors and aromas. She was also highly skilled in growing and harvesting different coffee varietals as Bourbon, Castillo, Geisha, Java, Laurina, Maragogype. Pacamara, Pink Bourbon and Wush Wush. The coffee world lost a very ambitious and caring person. Marcela unfortunately passed away in 2021.

 

ABOUT COFFEE

Grown by Marcela Castellanos at Finca Mayorca, nearby to the capital of the Quindio department, Armenia, this is the first time Forward has featured offerings from Marcela Castellanos, purchased through offer samples from our friends and partners at Cofinet.

Marcela and her husband, both doctors by trade, are most passionate about their coffee-growing business. Together, they’ve been growing coffee for 15 years, with distinct coffee varieties, such as Wush Wush, Orange Bourbon, Pink Bourbon, Yellow Bourbon, and Castillo.

Різновид: This micro-lot is 100% Wush Wush. This is a rare varietal grown in Colombia. It is believed that it made its way from Ethiopia about 25 years ago from Wush Wush. The cup profile is very floral, tea-like, and very complex.

 

 Обробка: This lot was exposed to aerobic fermentation for 24 hours.
Later, coffee was placed inside grainpro bags for 50 hours maintaining a temperature below 22 oC and adding CO2. Later, coffee was placed on raised beds at a temperature below 35 o until ideal moisture content was achieved.

Різновид: Sidra is a hybrid between Bourbon and Typica varieties. Its sweet and bright profile is a characteristic of this unique variety, said to have originated in Ecuador.

 

Обробка: This lot was exposed to a dry anaerobic fermentation of 48 hours inside Grainbro bags followed by a further 24 hours of aerobic fermentation. Then the coffee was placed back inside Grainpro bags for another 48 hours. Finally, the coffee was placed on raised beds below 35oC until ideal moisture content was achieved.
