Yirgacheffe Chelchele is perhaps the most popular specific origin from Ethiopia. It features in multiples roasters and coffee shops in every corner of the world. This coffee is located in the Gedeb District which we will uncover more of.

Cultivation
Yirgacheffe Werka Chelchele Station is one our largest washing station. More than 500+ nearby farmers as shown in this picture deliver cherries
to the station everyday either directly or through middlemen. As shown in the picture, Farms in Yirgacheffe are referred to as Garden Coffee as they
are grown on farmers backyard usually in small areas of lands. Most of the coffee goes back to Ethiopian Heirloom Varietal with some JARC 74110
& 74112.

Harvest , Post-Harvest & Processing
Due to the size of the station and the good supply for cherries in nearby farms, our Chelchelle station does Washed, Natural and Special Fermentation Coffees.
The Naturals are placed on African Drying Beds after 8-12 hours of harvest and dried for 3 days under shade and 19 days without shade.
This is what our manager Ali Yasin thinks is best to do in this station to have better quality while making sure cherries don’t last so long on beds to make room for newer cherries as demand is high for Chelchelle, Sakaro and Danche.
The Washed Coffees are pulped and washed with clear running water, soaked in clean water from 36-48 hours before being put on drying beds to dry until moisture drops to 11.5%. This takes 7-10 days depending on.

About
Known for small sized yet dense beans, Gedeb coffee is one of the best you can have. It is versatile as you can enjoy it as an espresso, cold brew and many others.
The diversity in its heirloom variety along with its high elevation makes this coffee one of the most sought for in Ethiopia, year after year.
