Our Coffees NEW: Africa 22-23′

This coffee is produced in the Woreda of Adola, Guji region. The Adola Washing Station has 250 raised beds and approximately 300 members of staff during the harvest season. The scale of this project coupled with its ease of access has meant that this year Israel has processed the coffees from the 1,470 smallholders as washed, natural and anaerobic lots.

The contributing farmers are all registered and a part of the Kerchanshe support network set up by Israel Degfa. This network helps smallholders and their families with access to healthcare, education and agricultural support.

Coffees from Guji, Ethiopia, are renowned for their exceptional quality and distinct flavour profiles. The region’s unique microclimates and high altitudes contribute to coffees with bright acidity, floral notes, and a complex array of fruity and citrus flavours, making Guji a celebrated origin for specialty Ethiopian coffees.

Processing

Natural processed coffees from Guji are celebrated for their unique and vibrant flavour profiles. In this process, ripe coffee cherries are meticulously handpicked, and instead of pulping, they are dried whole with the beans inside. This extended drying period, often on raised beds or patios, allows for natural fermentation, imparting the beans with rich, fruity, and sometimes wine-like characteristics.

Guji’s distinct microclimates and high altitudes contribute to the complexity and uniqueness of the natural processed coffees, making them highly sought after for their bold and exotic flavours in the world of specialty coffee.

In Guji, coffee cultivation predominantly revolves around heirloom varietals. These heirloom varieties are a mix of indigenous Ethiopian coffee plants that have evolved over centuries, adapting to the region’s specific microclimates and altitudes. Due to the complex intermingling of genetic diversity, it is challenging to pinpoint specific heirloom varietals in Guji. However, the use of these diverse and locally adapted plants contributes to the exceptional cup profiles found in Guji coffees. Heirloom varietals in Guji are prized for their ability to produce coffees with a broad spectrum of flavours, including bright acidity, floral notes, and a rich complexity that characterizes Ethiopian specialty coffees.
