This coffee is from another private farm of Israel’s, Anasora Farm in the Guji region. Located at crazy heights reaching 2,300masl, Anasora coffees are renowned for their slow maturation allowing more time for the plant to develop and contributing to a really unique cup profile year on year. Sprawling across 250 hectares alongside the river Turo, Anasora Farm employs 22 permanent staff and 110 temporary staff during harvest season. Israel also buys coffee from select local smallholders as well as using the coffee from his private farm. Guji coffees are celebrated for their exceptional quality and unique flavour profiles. Cultivated in highaltitude regions with distinct microclimates, Guji coffees often exhibit bright acidity, floral notes, and a complex array of fruity and citrus flavours, making them highly sought after in the world of specialty coffee.

Processing

In Guji, Ethiopia, natural processing of coffee is a traditional method that involves drying the whole coffee cherries in the sun. Farmers spread the cherries on raised beds or patios, allowing them to naturally ferment and dry over a period of several weeks. This process imparts a distinct flavour profile to the beans, often characterized by fruity and wine-like notes.
