San Marcos is a small town in the Ocotopeque department, in the western corner of Honduras, close to the border with El Salvador and Guatemala. Honduras is not only the biggest coffee producer of Central America, it is also a rising star in the Specialty coffee industry. The mountainous Ocotepeque area offers nutrient-rich soils and ideal weather conditions to grow coffee. Recently, the farmers have heavily invested in their infrastructure, expertise and knowledge. In San Marcos, the majority of the community dedicates their time to the production of coffee, which has become the main driver of the Ocotepeque economical development. San Marcos coffee is processed in traditional wet mills. Due to the heavy rain falls, producers use a combination of sun and mechanical drying to bring the coffee to its optimum moisture level.
