At Esmeralda we start by carefully instructing those who hand pick the fruit, to only pick the completely ripe, red fruits. They are paid premium for this service. Since we strive for absolute  onsistency and excellence in preparation, harvested coffee is always carefully inspected for defects or green beans. We devote enormous time to the details and fine touches that have always distinguished Hacienda La Esmeralda from other coffee producers in the world.
