Frederic Pillume is the owner of Finca Santa Ana in the region of Piendamo in the department of Cauca. The farm is situated at 1900 masl andis planted with colombia, castillo and caturra.Frederic is part of the Cooperative Comepcafe Cooperative based in Piendamo, Cauca where it was established on 2010. The Cooperative has 1400 families spread across 7 areas with Cauca with 1600 ha of coffee farms. The farms are traditionally planted with castillo and colombia with a small portion (5%) of typica an caturra. The Coop helps to support their members with technical support, commercialisation of the coffees, food security programs as well as a pension program looking to protect the producers in the future. The areas that these coffees come from are still very much involved in the troubles with them being heavily influenced by the FARC and illicit drug trade making life very difficult for these producers.Frederic is a young dynamic producer who is looking at ways to continue improving his coffee and elevate the quality. He has experimented with longer fermentation times as well as trying to produce natural coffees this year. He is always looking to learn and adapt how he works to produce high quality in the cup.This lot was a natural he produced selecting ripe cherry from the farm. After this he then floated and washed the coffees before then laying them on raised beds to dry. This is something extremely tricky in this region due to the humidity high up in the Andes and cold weather. The coffees were turned regularly during the day and it took 20 -25 days to dry the coffee.
